We bought this on good faith, never having used Henckels cookware before. It's the perfect saute pan (for us): it has the most comfortable handle I've ever held; it has nice steep sides so flipping things is a breeze (no danger of something flying out); it's non-stick yet still dishwasher-safe, and it was a reasonable price. I will definitely buy more Henckels cookware -- absolutely.

The ongoing debate over cookware at my house is over: All-Clad is the best cookware overall and is worth the extra money. Our coppers tarnish and require retinning. Our encapsulated disk cookware (Reverere and Farberware) suffer from loose and broken plastic handles and too-small disks which limit the cooking area of the fry pans. The biggest debate was between Calphalon and All-Clad LTD nonstick models. My wife really liked the lighter weight of Calphalon's Commercial Nonstick line. After living for both for several years, All-Clad has shown its overall superiority in the following ways:
1) Durability. The non-stick finish All-Clad uses wears like iron. The Calphalon's finish shows many more scratches and blisters.
2) Denser anodized finish. The All-Clad LTD finish is much denser and more even that that on Calphalon. This makes it more attractive and easier to clean. On the MC2 stuff the finish is not anodized, but it is tightly frosted and well made. It's quite attractive too. I've started to accumulate MC2 stuff because it's cheaper and performs just as well. The LTD stuff does look better on a rack mixed with Calphalon. It's tough to beat black aesthetically.
3) Greater heat sensitivity. You actually cook with the stove set to a lower temperature with All-Clad. It appears to register changes more quickly. Both types of pan are good in this reguard - but the All-Clad is noticeably better.
As a fry pan, the All-Clad MC2 12" fry pan hits on all cylinders. It's big enough for a 4 egg omlette, or most of pound of bacon. It's battleship built, well balanced, even heating with great sensitivity. The handle stays cool and is angled so that you can lift the heavy contents without undue strain on your wrist. The nonstick finish is effective and tough as nails. The MC2 finish is durable and very attractive. Ultimately I'm more partial to the LTD finish because it matches well with other anodized aluminum cookware - and you can clean it very effectively with Ajax. The MC2 finish will yellow a bit over time. Real chefs just let it get brown. It looks like real cookware. In any case, exterior aesthetics don't relate to cooking performance.
Update on the MC2 finish: after using it for months and letting it get nice and brown I tried cleaning it with the 3M scrubby and Ajax/Comet cleanser I use with the LTD finish and it worked like a charm on the MC2. Just make a nice paste and power away the burnt on grease in moments leaving a nice buffy shine. Don't worry about scratches - the MC2 finish is a fine patina of minute scratches anyway! It looks great and is basically indestructible.

I received the All-Clad induction burner from Williams-Sonoma.com a few days ago. I was delighted to finally experience the induction cooking. The unit is very attractive in design and finish. It is substantial but it is easy to move around. It has a well lit display, actual buttons to push and a dial to turn to select menus, manual modes and set the timer. The variety of controls is excellent. There are three choices! One is preset. You select a cooking program by pushing the "MENU" button from Melt to Sear, the total of 7 (seven) choices. There are two manual modes. One is description mode from EX LOW to HIGH (6 settings). The second manual mode gives a range from 1 to 10.
I used manual mode 1 in EX LOW to cook rice in a 2.5-qt LeCreuset pot. First, I boiled liquid (chicken broth) using "MENU" option "BOIL", and then I switched to EX-LOW using the manual mode. The switch to manual mode was instant. There was nothing to turn off, just to press on the "MODE" button. On EX LOW, the liquid boiled just barely but continuously. There was no ON-OFF cycling. Tiny bubbles from the entire bottom surface of the pot were reaching the surface without breaking at the surface. I added rice and set the timer. After 20 min the unit shut itself off. The rice cooked evenly from the bottom to the top.
I also seared sardines (outside on the deck) in a non-stick Circulon skillet with perfect results. The skillet was 11" in diameter and the sardines cooked uniformly over the entire surface of the skillet. There was no hot spot in the center.
I also used 12" All-Clad Copper-core skillet to cook 2 large red onions and 2 red bell peppers. The vegetables got cooked much faster and browned nicely. I just had to keep turning them over. From my previous experience cooking these many onions and peppers at once in the same skillet on a Gaggenau electric cooktop in the kitchen resulted in a soggy onion-pepper mixture. I think that induction and little air movement outside helped to keep the moisture level low. That is how the onions and peppers browned so well.
Of course, nothing is perfect. The induction burner is not silent. The noise is produced by a fan inside the unit. The noise was somewhat intrusive and annoying. The noise was not mentioned in the description of this appliance. Even though I really enjoyed the cooking on All-Clad induction burner, the noise issue may become too irritating for me to keep using this appliance.
3 months later:
I've discovered that when I used high temp settings--fry or sear (MENU) and medium-high and high (MODE)--the red light inside the button (depending on selection) would start blinking and the unit would stop heating a skillet after about 10 min. I fried slices of eggplant for moussaka using LeCreuset 12" fry pan. The unit didn't shut off and error message didn't appear. However, there was no cooking for about 1 or 2 min. The heating would resume for 1-2 min and then it would stop. When I subsequently cooked the meat sauce on medium, the unit worked normally. I cooked outside in the shade.
I called All-Clad and found out that their personnel isn't educated about this appliance. After countless calls no one would tell me why the unit was doing it. I replaced the first unit with a new. The new unit does the same. I suspect that this is a design flaw. The high temp settings could only be used for very short periods. The unit worked long enough to sear steaks before placing them in the oven.

Given the recent reports on the potential health risk from non-stick cookware, my family decided to go stainless. I liked the performance of clad cookware but reckoned that it might not be a wise choice financially to go all out with All-Clad before I have my own cooking show. The candidates came down to 3 product lines, Anolon Advanced Clad, J.A. Henckels International Classic Clad and Cuisinart Multiclad Pro. The best price I could find for them were all under $200 for 7 pieces, with Anolon having 10 pieces. Being all constructed in full clad, they seem to differ mostly in the handle design before I can do a performance comparison.
Henckels has a huge and unconventional handle. My first impression was it might not fit in my kitchen well. However, it was not until recently that I tried one at a local store. The pan balances well and has one of the most comfortable handles that I ever put my hands on. However, my family needs a larger stock pot and the included 6-quart one doesn't really serve our need.
Anolon has a silicon rubber handle. It's said to withstand the high heat in the oven. However, due to aesthetic preference and concerns about putting synthetic materials in high heat along with food, we decided to go with the Cuisinart set. In the meantime, we separately bought an Anolon Advanced Clad 12" stir fry pan.
The Cuisinart set is a very well made traditional tri-ply cookware with all metal handles. The built differences between Cuisinart and All-Clad is so insignificant to me that it makes the several-hundred-dollar saving and having a set of quality stainless steel cookware set truly a joy. The finish of the Cuisinart pans was superior to the Anolon stir fry pan. However, Anolon's silicon rubber handle obviously is more functional and practical than metal handles since it never becomes slippery or hot in your day-to-day use. I guess this would come down to a personal preference.
The pans both brown well and distribute heat quickly and evenly. The cleaning is also a breeze as long as you heat the pans briefly before cooking. Overall, I'm very satisfied with this purchase.

We purchased the CIA Masters 10 piece set, plus the 12 inch frypan and a wooden spoon after researching the Viking and All Clad Copper Core sets. We were able to visit stores in our area to handle the Viking and All Clad sets before purchase - we were not able to see the CIA Masters set before purchase.
In terms of weight, the CIA Masters set is similar in weight to the All Clad regular stainless set. The handles have two rivets and have the All Clad grove with the Viking curvature. The lids are slightly domed similar to the Viking set.
In terms of the copper layer - we compared the CIA set against the All Clad Copper Core. If you look at a piece of All Clad Copper core you will see a copper layer that is about 1/8" thick and very easily identified. If you look at a piece of CIA Master cookware, the copper layer can hardly be seen. Given the price of copper these days, my guess is this amount of copper in the CIA cookware is part of the price difference to the All Clad Copper Core set. (10 piece set of CIA cookware is $499, 10 piece set of All Clad Copper Core $1200.)
The set arrived from Metro Kitchen in three days and was beautifully packaged.
So - why won't we recommend the set? First -you need to use silicon or wooden utensils with this set. Do not use metal utensils. The stainless steel is very very soft and the pans scratch easily. In fact, the very first time we used the set we made large, easily visible scratches on the outside bottom and inside just from making risotto. (note -- we have other stainless steel cookware where this is not a problem.)
Second, the golden rule when using stainless is to use low to medium heat. Higher temperatures cause a reaction with stainless steel which cause a bluish / brownish stain. The first time we used one of the frypans this marking appeared despite the low heat we used.
We haven't had any problems with food sticking (that pretty much a function of knowing how to cook in stainless anyway...) - but we can't honestly say the cookware is any better than the Emerilware or Cooks Essentials set we had previously.
Frankly we wish we had not paid $500+ for cookware that is "just okay" and that is going to show wear in a very short time. The Viking or All Clad set would have been a better choice.

The above review (one star) is very misleading as it does not rate the All Clad product. Rather, it rates both an inferior product and the dealer who sent it to him/her. All Clad is a wonderful product. I have some that is over 25 years old and still looks new. Additionally, the shiny stainless is compatible with induction cooking for the green minded cook.

I bought this pan for about 60 dollars at Kohl's. I had heard good things about the copper core design, and thought I would give this a try.
I cook a lot. I cook dinner for myself and by fiance almost every night, and make good use of this pan. It is a lot less than what I expected, and certainly not worth what I paid for it (although to be fair I was ripped off, since it is about half price on here).
The heating seems to be uneven to me. I have to move the pan around to different positions to get the whole thing to heat up properly, otherwise the food will burn in places and be raw in others. It also sticks. HORRIBLY STICKS. Everything sticks to it, including ground beef! I have tried every temperature setting and every kind of oil you can imagine, and everything still seems to stick. It will peel the skin right off of chicken! (And in case you were wondering, I do not have this problem with other stainless steel pans I own, so it's not just me being a terrible cook).
Cleaning is a little difficult as well, since there is always a layer of stuck food at the bottom. I've also noticed that they don't stay particularly shiny. I hand wash and hand dry them, and they seem to have really bad water marking left on them. (I might just need to polish them though, so that could be my fault)
All in all I would not really recommend this pan. I would just go ahead and spend the extra money on a Calphalon or an All-clad (those are the brands I have used that work great, but they are pricey). Or at least buy a different one than this, you might just be disappointed. :(

Very good pan. Thick material up to the edges really makes a difference in terms of even heating. Even though there's not a nonstick coating on this, it cleans up easily. (Furthermore, there are ways to cook without making a mess in the first place.)
I actually think people put too much emphasis on their cookware. As long as you're not cooking in a bad pan (e.g. a $20 one from Ikea), most pans work well. People fall for the cookware endorsed by Martha Stewart and Michel Bras and other celebrity chefs. When I was picking out cookware, I almost decided to go with Mauviel upon seeing a large display of it, simply because it looked nice and I knew it was a "high class" brand of cookware. That said, these pans have the benefit of working on induction stoves and having welded (rivet-less) handles. (Mine has a helper handle across from the main handle, but I don't see it in this picture?) My dad has restaurant-grade pans (Lincoln or WearEver), and they perform similarly despite the price difference. His are, however, not ones I'd leave out or display in an open kitchen system.
I also own Demeyere stock pots and sauce pans, and like them all.

I would strongly recommend looking elsewhere, unless you are only looking to cook in the middle 9" circle of this griddle. There is absolutely no heat transfer outside this area. We eventually bought the All-Clad electric griddle from W-S. We are very happy with that. It's an excellent product, but way more expensive...

I've never owned another set of stainless steel cookware (so I don't have much of a comparison), but this Bonjour set has been wonderful so far. It cooks quickly and evenly, even on our electric stovetop. (Note: It is definitely more work to keep clean than non-stick, but it's so much better for cooking certain items.) The BEST thing about it though is how beautiful it is. I feel pretty confident that this works as well as a similarly priced Calphalon set, but it's so much more attractive! We've had people comment on how pretty and professional the pots look. I would definitely recommend the set or any individual pieces.
