The sloping sides compared to a regular sauce pan make this pan the one you should use as a foundation for building your cookware arsenal. I do not believe in buying full sets of matching cookware. Half of it you will probably never use. I worked in the food and catering business for 20 years and I know that you should choose each pan or pot carefully. Read Alton Brown's book "Gear For Your Kitchen", and remember Julia Child's show (available on DVD). You will see why good chefs use a variety of pans. This chef's pan is just great, I could not live without it just like my 10 inch cast iron skillet. Happy cooking.

I bought this pan four years ago and planed to use it as an everyday wok, mainly to make stir-fry dishes. After years of use, I finally have to admit that it is not a good replacement for a traditional Chinese wok. However, I still like it overall. It has even heat distribution, versatile, sturdy, easy to clean, well-made, and looks nice.
If you are looking for a stir-fry wok, don¡|t get this pan and choose a traditional carbon steel wok instead. One major disadvantage of this Chef¡|s Pan is that it cannot reach the high temperature required to make tasty Chinese stir-fry dishes. If you preheat it for 3-5 minutes, add some cooking oil and then food, the pan quickly cools down. You end up boiling the food instead of stir-frying it. The essence of Chinese stir-fry is to cook food at very high temperature in order to seal the juice in the food. Boiling removes the juice along with the flavor from the food. A traditional wok, made of either carbon steel or cast iron, can reach the high temperature required for stir-fry dishes.
A traditional carbon steel wok is very cheap and can last a life time if cared properly. The downside is that it can rust easily if not cared properly. (I prefer the type without the nonstick coating because the Teflon nonstick coating won¡|t last long under high heat, and it will eventually disintegrate and get into the food.) You MUST season a traditional wok before using it the first time. Seasoning the wok builds a brown-black patina on the interior that makes it non-stick and also prevents rust. After cooking, wash the wok with hot water only (No detergent !), wipe dry with paper towel, and then heat it on stove to remove any moisture on the wok. Do not soak it in sink after cooking or you will regret. I don¡|t use my carbon steel wok to boil food and never use it to steam, as they may damage the patina. Scouring the wok or washing it with detergent will also damage the patina. So avoid scouring or you will need to re-season it afterwards.
Overall, I like All-Clad¡|s Stainless Steel line of cookware. I have several other pieces besides this 12¡¨ Chef¡|s Pan. All of them are great and I won¡|t trade them for other cookware. But I have a traditional Chinese wok just to make stir-fry dishes. If you are looking for a stir-fry wok, you can get a 14¡¨ carbon steel wok (no Teflon coating) from Target or Asian food store under $20.

I really have to question how the other reviewer managed to conclude that food cooked in the Master Chef is healthier than food cooked in a traditional steel wok. Since this pan isn't nonstick, you'll have to use as much oil or even MORE oil than in a carbon steel wok to cook, because carbon steel absorbs oil as it becomes seasoned and over time becomes far less sticky, and thus requires less oil to cook with.
I'm not saying that this ultra-luxe pan isn't a great pan, but don't expect it to cook healthier food just because it uses multiple metals or costs several times as much as a cheap traditional wok. It's also questionable as to whether this pan transfers heat better than a traditional carbon steel wok, since the reason the aluminum core is inserted is partially because stainless steel doesn't transfer heat as well as regular carbon steel, so the aluminum is inserted to compensate. It might be true that the aluminum actually enhances it enough so that it can even beat out carbon steel, but I have my doubts.

Slowly but surely, I'm accumulating all the pieces to my Tri-Ply collection. This pot has some redundancy, as it's very similar to my 3-1/2-Quart Saucepan, but the main difference is that the sides are a bit sloped. Thus, I can use it for other applications, such as stir-frying and casseroles. Moreover, this size is a very handy size to have.
One further note- there is a feature I like about the Tri-ply line, in that the lids collect the moisture during cooking, accumulates this on the lid, and deposits back into my food. This really helps to re-moisturize my food, and in general, make everything taste better!
What I can't believe is someone down below comparing the Tri-Ply line to Simply Stainless. That's like comparing BMW to Chevrolet. SS does not come with a lifetime warranty, and is NOT tri ply all around, it just has an aluminum core. Pay more for quality cookware.
A note about cleaning- after extended use, there will be tarnishing and brown blemishes (at least on my gas range). To get rid of these, do NOT use Bon Ami because it's too gentle- doesn't get rid of stains. Best way to go is Barkeeper's Friend, about $2.50 at your local supermarket, or Cameo Stainless Steel Cleaner. However, Cameo is more abrasive than Barkeeper's Friend, and WILL reduce the mirror polish of these pans. Barkeeper's is the way to go- remember to ALWAYS rub in a circular manner- back and forth will scratch the surfaces.

I've had these pots and pans for 1.5 years now, and have steadily added to my tri ply collection. I'm still very pleased with them.
- They have still retained their mirror finish on the exterior.
- Cleanup is a breeze- just rub a bit of barkeeper's friend (I'd like to shake the hand of whoever invented that- best thing since sliced bread).
- The moisture channeling from the lids is very much appreciated- everything I cook is definitely juicier.
- I was amazed at the quality of material- I boiled some eggs in a pot one day, and 14 hours later, I kid you not, the water was still warm, not lukewarm, but warm!
The biggest complaint I have about the pots, and the sole complaint that I can think of, is that the handles on the lids do get a bit hot when cooking. Just do yourself a favor and grab a pot-holder when cooking.
Otherwise, I'm still very satisfied with them!

I had been looking for a larger saucier because I needed a 4 qt pan and I like to cook with a whisk. I was going to purchase the Calphalon Tri-Ply 3 qt Chef's pan until I tried it out at BB&B, and discovered that the handle was too short and at an uncomfortable angle for me.
While I was there I looked at the Emerilware, and really liked the handles. I found this pan here on Amazon - one of only two 4 qt Chef's pans that I was able to find (the other one was a Calphalon Contemporary that was $159.99 - WAY too expensive for me) and based on the good reviews, decided to buy it.
I used it tonight to cook brown rice, and there are some things that I really like about it. While I was skeptical about the disk on the bottom being so much smaller than the diameter of the pot, I found that I could use the small burner on my electric coil stove on high to bring the water to a boil, and then turn the heat down to low for the rice to cook. It cooked evenly and the rice was done much sooner than it is in my older pans. But then, it could also be because I could see through the glass lid (I like glass lids) and was able to tell when it was done, without depending solely on the timer.
Also, I have rheumatoid arthritis and not a lot of strength in my hands, so I really liked the helper handle. Though the handle on the pan lid got hot, the handles on the pan itself remained cool.
So then, why the three stars? After the rice was cooked, I took the lid off the pan and used a metal cooking fork to fluff it up. I always do this, and it was NOT done in an abusive manner. After I washed the pan, I noticed two pits amongst some scratches on the bottom. I could also feel a spot that had what felt like a "burr" on it. Now, I understand that scratches happen on stainless cookware, and I really don't have a problem with that.
However, the pits, IMO, should never have happened. I took the fork and one of my older pans (an Amway Queen multi-ply 18/8 stainless saucepan), and whacked the bottom of it quite vigorously with the pointy end of the fork tines, several times. It left no marks at all.
When I tried the "fork treatment" on the bottom of the Emerilware (ONLY once, and nowhere near as hard as I did it on my old pan - I wanted to see if the fork was the culprit), I ended up with a nice row of three tine marks! It just makes me sick...I know it's not the *best* quality cookware, and I didn't expect top-of-the-line All-Clad quality at this price point, but this is stainless steel and you should be able to use metal utensils in it without causing this kind of damage to the surface. At this rate, it will look like it's been through WW III before the month is out.
I'm going to call the company tomorrow and see what they have to say about it, but if they're not helpful, I'm packing it up and sending it back to Amazon.
Too bad. Like I said, I really wanted to love this pan...

Well, after reading some other reviews of Emerilware Stainless, talking to my husband, and sleeping on it, I've decided to keep it. While this line used to be decent, it seems that in the last year the company has "cheapened it up" (because, you know, we need more cheap Chinese crap), and when I checked the Amazon return policy, I would have to forfeit half my money. Hubby's laid off, and I'm not willing to do that. Plus, I haven't found any affordable alternatives.
There are still plenty of things I like about the pan, so I'll just think of it and treat it like an inexpensive non-stick pan - no metal utensils, and if it gets too bad, I'll replace it.
